You Cod to be Kidding Me ... This is so Easy

Ingredients

  • 1 Pound of Cod/Fish (I prefer the thicker part)
  • Sea Salt or Kosher Salt
  • Organic Cracked Pepper
  • Organic Onion Powder
  • Organic Garlic Powder
  • Spray Canola Oil

Step 1

Pre-heat oven to 400 degrees. 

Step 2

Spray and season your parchment-lined cookie sheet with your oil/spray of preference, 1/4 tsp of salt and 1/4 tsp of pepper.

Step 3

Place your cod/fish on top of your blanket of oil, s&p. 

Step 4

Season the entire top of your cod/fish with a gentle sprinkling of these seasonings: 1/4 tsp of salt, 1/4 tsp of pepper, 1/4 tsp of organic garlic onion powder and 1/4 tsp of organic garlic powder. 

In order to seal in your seasoning, spray/drizzle your oi to secure the blanket of seasoning on top of your cod/fish. 

Step 5

Place your seasoned cod/fish into your pre-heated oven for about 20-30 minutes. 

Pro Tip: I like to cook my cod/fish for about 20 minutes and finish it off with a high broil for about 3-5 minutes. Lightly cover the fish with aluminum foil once taken out of the oven. This gives your cod/fish a little recovery time for all it's working out. 

Turkey Chop Meat

Having this pre-made in your fridge will keep you from opening that pantry door that is filled with empty calories that will only require you to do more Mise-En Exercise rounds and being hungrier. TRUST ME, that is why I came up with this quick meal-prep recipe. 

Ingredients

  • 1 Package of Lean Turkey Chop Meat
  • 1 Green Pepper (chopped)
  • 1 Red Pepper (chopped)
  • 1 Small Yellow Onion (chopped)
  • 3 Cloves of Garlic (minced)
  • 2 Tbsp of Coconut Oil
  • Salt & Pepper to Taste
  • 1/2 of a Fresh Lemon (save the other half of that wonderful lemon for when you warm up your food)

More flavor options if you get bored of the same old recipe above. You can add any one of these dried spices after the + turkey chop meat step below.

  • 1 Tsp of Dried Oregano
  • 1 Tsp of Italian Seasonings
  • 1 Tsp of Turmeric
  • 1 Tsp of Smoked Paprika

Step 1

Heat up your coconut oil, salt and pepper in a low heated frying pan until your coconut oil starts to melt, but not sizzle.  

Step 2

Add your garlic and onion to the oil and season with salt and pepper.

Step 3

Add your red and green peppers to the pan (you should start hearing the sizzle now) and cook for about 1-2 minutes on medium heat (just enough to take the bite out). 

Step 4

Add your turkey chop meat to your pepper goodness. Keep mixing and breaking  apart the turkey meat clusters. The meat will start to turn a pale white color. Keep mixing and breaking apart the meat until the meat is mostly white with very little pink.

*At this point you can add any of the additional flavor options mentioned above to the cooking turkey meat.

Step 5

Now squeeze lemon juice all over the cooking turkey/veggie mixture. Lower the heat and cover for about 5 minutes to start the steam process.

Turkey doesn't take long to cook, so keep an eye on it and every so often, give it a little stir. The little fat that is from the turkey will start to mix with your lemon juice and the natural juices from your veggies, creating a very HEALTHY and full of flavor dish. 

You will know that your turkey chop meat is completely cooked when the pink is completely gone and you are left with all white meat. 

Step 6

Place your cooked turkey mixture in a glass container with the other lemon half on top. Cover and store in your refrigerator for 3 days. *When re-heating. I like to squeeze fresh lemon juice on my turkey meat while it is warming up in the microwave. The warming up process creates a steam, and lemon juice helps make the re-heated dish come alive.

"Carb Fake Out" Bananas

Ingredients

  • 1 Small Banana
  • 2 Tbsp of blanched/sliced/chopped Almonds (or another nut if you prefer)
  • 1 Tsp of Chia Seeds
  • 2 Tsp of Ground Flax Seeds
  • Spray Spectrum Canola Oil or Pam

Step 1

Take your peeled banana and slice right down the middle (you can even do it in thirds). Then spray each side of your banana with your canola oil or pam spray.

Step 2

Heat up the frying pan to medium heat. While your pan is getting warm, start "faking out" your banana: 

In a shallow bowl or plate, mix your nuts, chia seeds and ground flax seeds. This will become the "breading" for your banana. 

"Bread" both sides of each sliced, sprayed banana at a time with the "carb fake out" mixture. You can put a little muscle into the pressing, that way the breading really sticks to the banana. Depending on the thickness of the banana and the heat of the pan, sear your breaded banana for approximately 3-4 minutes per side. Personally, I cook the banana until some caramelization start to happen.  

Step 3

Serve with any of your breakfast friends: eggs and turkey bacon, add it to your steel cut oats, you can even eat it with a scoop of almond butter for a quick power snack.
