"Guilt-Free" Omelet

Ingredients

  • 1 Carton of Organic Egg Whites (1 carton will fill 6 ramekins or a standard muffin tin size)
  • 1 Container of Pre-Cut Rainbow Peppers
  • 1 Small Chopped Onion
  • Coarse Salt
  • Ground Pepper
  • 2 Tbsp of Chopped Fresh Parsley
  • Non-Stick Canola Oil Spray

Other ingredient options you might want to try:

  • Oven Roasted Turkey
  • Shredded Organic Cheese
  • Chopped Mushrooms
  • Spinach
  • Ham
  • Bacon

Step 1

Pre-heat your oven to 375 degrees. Generously spray your muffin tin or ramekins with non-stick spray. 

Step 2

Add 2 tablespoons of the combined ingredients of your choice: parsley, veggies, protein and/or dairy to your greased ramekins or muffin tin.  

Step 3

Pour about 2 tablespoons of your liquid egg whites on top of your omelet fillings. Make sure your fillings are completely covered with your liquid egg whites. Season each cup with a sprinkle of coarse salt and ground pepper. 

Step 4

Bake until the egg mixture puffs up and is just set in the center, about 10-15 minutes. You will know that the cooking process is just about complete when the egg edges start to get crisp. Using a rubber spatula or butter knife, loosen the guilt-free omelets from the muffin cups or ramekins and slide them into a glass container.

Pro Tip: This is a great recipe to make ahead of time, especially on the days when you need to have breakfast ready ASAP. Having these "guilt-free" omelets ready to go will keep you from eating those empty Starbucks calories. You should also have extra omelets readily available to fight that 3 PM hunger attack. I like to tell ladies that they should think of themselves as a Bentley, not a Yugo. Only the best fuel goes into that Bentley, so why shouldn't we put the best fuel into our bodies? My fellow STRONG women do not settle for low occitane food. Remember, you are #WORTHIT and deserve to make better choices. 

Steel Cut Oats

Ingredients

  • Pre-Made Steel Cut Oats
  • 1/2 Cup of Berries (I like blue, raspberries, strawberries & blackberries)
  • Small - Medium Banana
  • Chia Seeds
  • Cinnamon
  • Ground Flax Seed
  • Salt & Pepper to Taste
  • Optional: 1/2 Cup of Milk, Almond Milk or Coconut Milk
  • Note: I use 1/4 cup of water to warm up my oats 

Pre-Step

Read the container on how to prepare your steel cut oats. Pre-make your SCO for the next 3 days for a quick and easy breakfast. Store cooked oats in a glass container for easy access. 

Wash your 1 1/2 cups of berries and store in a glass container for the next 3 days.

Step 1

Scoop out 1/2 cup of oats into a microwaveable bowl.  

Step 2

Sprinkle desired amount of ground flax seed, chia seeds and cinnamon.

Step 3

Add your desired liquid to the oat/seed/spice mixture. Gently mix your oats and friends together and warm in the microwave to your desired temperature.

Step 4

Top with 1/2 cup of washed berries and enjoy with a sliced banana. 

Not Your Granny's Brussel Sprouts

Ingredients

  • 1 -2 Pints of Brussel Sprouts (trimmed and thinly sliced)
  • 2-3 Cloves of Garlic (roughly chopped or minced)
  • 1/2 of a Sliced or Diced Yellow Onion
  • 1 Cup of Chopped, Pitted Medjool Dates
  • 2 Tbsp of Coconut Oil (or whichever oil you prefer)
  • Coarse Salt and Ground Pepper to Taste
  • 1/4 Cup of Chopped (NO SALT), Shelled Pistachios
  • A Few Drops of Fresh Lemon Juice
  • Splash of White Wine (I use Santa Margarita)

Step 1

Add oil to the pan and heat over medium heat.

Step 2

Add garlic and onion, and cook, stirring often, until soft but not browned, reducing heat if necessary (about 4 minutes). 

Step 3

Stir in your pistachios, dates, salt and pepper. Increase heat to medium-high.

Step 4

Add the Brussel sprouts and cook, tossing or stirring occasionally, until tender and warmed through, about 3 minutes. Make sure you do not over cook, leaving the Brussel sprouts a little crunchy will be good, especially if you are planning on re-heating them.

Step 5

Just when you think your Brussel sprouts mixture is about done, add your acid friend Lemon Juice or White Wine ... just a little bit though. Too much will totally be a buzz kill to your Brussel sprouts party. And trust me, these brussel sprouts are trying to improve their reputation. #SAVETHESPROUTS

Store in a glass container for 1-3 days.
