Tumeric Roast Protein

Ingredients

  • 5 Pound Whole Chicken* or 2 Large Chicken Breasts on the Bone
  • Sprinkle of Turmeric
  • Sprinkle of Fleur De Sel or Kosher Salt
  • Whole Container of Cherry Tomatoes
  • 1 Large Yellow Onion
  • Sprinkle of Cracked Pepper
  • 1/2 Cup of Peeled Garlic Cloves
  • A Few Sprigs of Fresh Thyme
  • A Few Stems of Fresh Parsley
  • 1-2 Tbsp of Dried Oregano
  • EVOO or Coconut Oil
  • White Wine (I only use wine that you would drink like Santa Margherita Pinot Grigio)
  • 1-2 Fresh Lemons

Step 1

Preheat the oven to 425 degrees and position a rack in the lower part of the oven. 

Step 2

Pat your chicken dry and sprinkle your turmeric seasoning over the entire chicken. 

Step 3

Gently mix these ingredients in a separate bowl:  washed cherry tomatoes, thick sliced onion, roughly chopped garlic cloves, 1 lemon cut in quarters, 1/2 cup of fresh parsley, salt and pepper. 

Add a heaping spoonful of this mixture under the skin and on the rest of the chicken. Then season again with salt and pepper.

*If you are cooking the whole chicken: Generously season the cavity of the chicken with salt and pepper. Stuff with half of a lemon, a few garlic cloves, 2-3 quarters of onion and 4 thyme sprigs.

Step 4

Place chicken in a roasting pan breast-side up with the remaining mixture of cherry tomatoes, onion, garlic, lemons and herbs. Add 1/2 cup of white wine. 

Step 5

Roast for 30 minutes or until the breast is firm and just beginning to brown in spots. Using tongs, turn the chicken breast-side down, baste with juices and roast for 20 minutes longer, until the skin is lightly browned. 

Step 6

Using tongs, turn the chicken breast-side up and baste again. Add half a cup of water if the liquid in the pan has evaporated. Roast for about 20 minutes longer, or until your thermometer (inserted in the inner thigh) registers 155-160 degrees and juices are running clear.

Step 7

Transfer the bird to a cutting board and tent with foil. Remove aromatics and vegetables from the cavity. Carve the chicken and serve.
