Ingredients

  • *6 cups of cooked farro (follow cooking instructions on the back of the farro bag )

  • 6 mini english cucumbers chopped set aside

  • 2 tbs chopped red onion set aside

  • 2/3 cup of toasted almonds (chopped, sliced, or slivered)

    • DRESSING

    • 1/3 cup of EVOO

    • 1/2 cup of red wine vinegar

    • 2 tbs of H2O

    • 3/4 tsp salt (maybe add more if needed)

    • 1/4 tsp fresh ground pepper

    • 1 tsp of dry dill or 2 tbs of fresh dill

    • 1 tsp of fresh minced garlic

    • 1/4 cup of minced red onion

    • 1 tbs of honey

      • Dressing Step 1 : mix, and blend all the above dressing ingredients together. Mixture will make 1 cup of dressing. Add 1/2 a cup and save the other 1/2 to add to farro party just before serving.

Step 1

Combine all these ingredients in a medium bowl and mix all together with a wooden spoon. Combine: cucumbers, farro, toasted almonds, & 2 tbs of your chopped red onion.

Step 2

Pour 1/ 2 cup of your dressing over your farro party. Chill for 20 minutes before you serve, this allows all those yummy ingredients to become friends.

Step 3

Remove from fridge, mix up your farro party again, add extra dressing, MIX, SERVE & ENJOY!

Waistline Friendly Veggie Dip

Herein this photo is a sneak peek into one of my “Healthie-Bestie” gatherings.

Ingredients

  • 1 container of plain Siggy’s yogurt 

  • 1 tsp of minced garlic 

  • Lemon Zest (I used my entire medium lemon)

  • 2 Tbsp of chopped fresh dill 

  • Fresh ground pepper (1/4 Tsp or to taste) 

  • Sea salt (1/4 Tsp or to taste)

  • 3 Tbsp of fresh lemon juice 

Step 1

Combine all the above ingredients in a medium glass bowl and combine with a rubber spatula.

Step 2

Chill for 20 minutes before you serve. This allows all those yummy ingredients to become friends.
