Tomatoes + Beans

Ingredients:

  • 3 Medium Firm Tomatoes 
  • 1 Can of Unsalted Organic Black Beans
  • 2 Tbsp of Freshly Squeezed Lemon Juice
  • Salt & Pepper to Taste
  • 1 Minced Garlic Clove
  • 2 Tsp EVOO or Grapeseed Oil

Step 1

Rinse and cut your tomatoes into quartered wedges and place them into your glass bowl.

Step 2

Open your can of unsalted organic beans, drain and rinse them with cool water, then pat dry. Add your beans to your tomato party

Step 3

In a separate bowl, whisk your lemon juice, salt, pepper, garlic and oil all together. Pour your homemade dressing over your tomato and bean party. Mix and enjoy!

Farro 4+

Ingredients:

  • 1 Cup of Organic Farro
  • 3 Cups of Water
  • 1 Cup of Diced Peppers
  • 1/2 Cup of Roughly Chopped Fresh Parsley
  • 2 Tbsp of Chopped Red Onion
  • 1 Minced Clove of Garlic
  • Kosher Salt
  • Ground Pepper
  • 2 Tbsp of Grapeseed Oil
  • Juice from a Whole Lemon

Step 1

First start by rinsing and draining your farro. Place in a pot and add enough water or stock to cover (1 part grain 2 parts water). Bring to a boil. Reduce heat to medium-low and simmer 30 minutes. Drain off any excess water

Step 2

Add your pepper, onions, garlic and parsley to your cooked farro.

Step 3

Pour oil oil and lemon juice over your Farro 4+ and mix all together.

Step 4

Season with salt and pepper to taste. Cover and chill in your refrigerator for 1 hour or overnight.

NJAPP "Gym Junkie" Shake

Ingredients:

  • 1 Scoop of Protein Powder (I use Vega Sport Vanilla)
  • 1 Cup of Unsweetened Vanilla Almond Milk
  • 1 Cup of Spinach
  • 1 Tablespoon of Almond Butter
  • 2 Tbsp of Respberries
  • 1 Tsp of Chia Seeds
  • 1 Date
  • 1/2 of a Medium Banana
  • 4 Ice Cubes

Step 1

Drop your ice into your empty blender, followed by your almond milk, protein powder, date, spinach, banana, almond butter, raspberries and chia seeds. Place your blender on high and blend for 2-3 minutes or until fully blended. Pour immediately into your cup and drink up.

NJAPP TIP:  If there are any leftovers. I like to freeze mine for a healthy ice pop treat later on in the day.
