Berrylicious Syrup Goodness

Ingredients

  • 1/2 Cup Fresh Washed Raspberries
  • 1 Cup of Fresh or Frozen (thawed) Strawberries
  • 1 1/2 Tbsp of Almond Butter
  • Pinch of Himalayan Pink Salt

Step 1

Prepare your berries by washing and patting dry.

Step 2

Using a food processor, add these ingredients to start the party: 1/2 cup of raspberries, 1 cup of your strawberries, 1 1/2 tablespoons of almond butter and a pinch of Himalayan pink salt. 

Step 3

Blend together until everything is fully blended and resembles a thick smoothie texture. Pour into small shot glasses and serve alongside your SCO pancakes. 

Pro Tip: You can even add this syrupy goodness to your regular bowl of STO. Mix it with plain Siggi's yogurt. As a third option, you can even freeze the "syrup" in those old ice cube trays to make for a quick treat when the kids go to bed. Don't forget to add a toothpick halfway through the freezing process, this way you can pop out your #WorthIt ice pop easily.

Turkey Burgers

Ingredients

  • 1 Package of Shady Brook Farms Turkey Chop Meat (I prefer the NO added hormones, steroids or growth promoting antibiotics) 
  • 1/2 Granny Smith Apple (chopped)
  • 1/4 Cup of Thinly Sliced Leeks
  • 2 Cloves of Minced Garlic
  • 2 Tbsp of Chopped Fresh Parsley 
  • 1 Tsp of Kosher Salt
  • 1 Tsp of Coarse Black Pepper
  • 2 Tbsp of Apple Cider Vinegar
  • 1 Egg

Step 1

Heat up your cast iron frying pan.

Step 2

Mix all of the above ingredients together. 

Step 3

Spray your pan generously with your spray oil.

Step 4

Scoop out 2 heaping tablespoons of your turkey meat mixture. Drop them onto your warm, sprayed pan. I cook 3 patties at a time on my pan.

Step 5

Cook your burgers evenly on both sides. Making sure there is no evidence of pink in your burgers.

Pro Tip: Serve alongside any roasted veggies or on top of a simple spinach salad with a dollop of hummus or ground mustard would be delish too. 

SCO Pancakes

Ingredients

  • 1 1/2 Cups of Pre-Cooked Steel Cut Oats
  • 1 Medium Semi-Ripe Mashed Banana
  • 1/4 Tsp of Natural or Organic Cinnamon
  • 3 Egg Whites
  • Spray Canola Oil
  • Cast Iron Pan or a Griddle
  • Parchment Paper
  • Cookie Sheet

Step 1

In a small glass mixing bowl, add these ingredients and gently mix together: 1 1/2 cups of your pre-cooked SCOs, 1 medium mashed banana, 1/4 tsp of cinnamon, 3 egg whites. Set aside.

Step 2

Heat your cast iron frying pan before you spray it with your spray canola oil. Make sure your pan is really hot before you start your pancake making process.

Step 3

Generously spray your heated frying pan with your canola spray. Lower your heat to a low flame when you are ready to start.

Step 4

Scoop 1/4 cup of your SCOs mixture onto your heated, generously sprayed frying pan. Do this 2 more times, cooking 4 pancakes at a time.

Step 5

Cook each pancake slowly before flipping them. They tend to break a part if flipped too soon. This is the perfect time to do my "pancake flipping" exercises.

Step 6

Repeat steps 3-5 until there is no more pancake mixture left. 

Step 7

Pre-heat your oven to 350 degrees. Place all of your cooked SCO pancakes on a lined cookie sheet. Cook for about 5-8 minutes to finish off your SCO pancakes. 

Step 8

Place 3 pancakes on a small dish with some "Berrylicious" syrup. This breakfast dish will make you feel satisfied and WORTH IT.

Pro Tip: SCOs double in size when cooked. Only cook 3/4 of a cup of un-cooked SCOs in order to have the correct amount for 3 days. When you make 1 1/2 cups of SCOs, you will end up with 1/2 cup per day for 3 days of meal prep. Or follow the container's directions and meal prep for your husband/children too. Having extra SCOs never hurt nobody.
