Chicken Salad Wrap ↑Graded

Ingredients

  • 1 cup of shredded (white meat) cooked chicken
  • 1/2 cup of diced apples (granny & red delicious) 
  • 2 tablespoons of unsweetened organic apple sauce
  • 1 blanched collard green 
  • Kosher Salt to taste
  • Fresh ground pepper to taste.

STEP 1 

First let us prepare your flourless wrap by removing the leaves from its stem. Now you are ready to blanch your green in a large pot of boiling salted water, about 1-2 minutes; cool down with a ice-bath; drain and pat dry on a cookie sheet. Let cool completely before adding your protein mix. Greens can be stored in an airtight container in refrigerator up to 4 days.

STEP 2

Shred your oven baked cooked chicken breast and add to a medium mixing bowl. 

STEP 3

Add the chopped apples and applesauce to your shredded protein and mix well. Season with salt and pepper.

STEP 4

Lay your flourless wrap onto a flat board and add your protein/apple mix to the center of your wrap. Fold in the sides and wrap it up like a burrito baby. 

STEP 5

Slice in half and serve with your leftover apple slices.
