Naked T-Burgers

Ingredients:

  • 1-2 Packages of Turkey Chop Meat
  • Spray Oil for your Pan or Griddle
  • Salt & Pepper
  • 1 Lemon for Post-Cooking Tastebud Awakening
  • Extra Articles to Dress Your T-Burger:
    • 1 Thinly Sliced Yellow Onion
    • 1 Thinly Sliced Medium Green Pepper

Step 1

Shape and mold your turkey chop meat into 4-6 patties.

Step 2

On a medium flame, start to warm your griddle or skillet. Spray with your oil of choice and let it warm with the pan.

Step 3

Now it is time to increase the heat to medium-high flame. Once you see the wisps of smoke, it is Go-Time for your T-Burgers.

Step 4

Cook the T-Burgers on one side for 3 to 5 minutes (cook until there is no evidence of pink anywhere), sprinkle the tops generously with salt and pepper, flip and cook for another 3 to 4 minutes and season with salt and pepper. *You should see a dark brown sear on the underside. If there isn't any, just increase your heat for the next time.

NJAPP Pro Tip: If your T-Burger needs a little covering:

Separately add 1 Tbsp of coconut oil to your heated skillet or pan.

Add some sliced peppers and onions to your melted oil.

Season with Sea Salt & Fresh Ground Pepper.

Mix all together until the onions start to brown (3-5 Minutes).

Now you can dress your T-Burger with this onion-pepper mixture and serve on top of a bed of string beans with a splash of freshly squeezed lemon juice. Devour and save some for your 3 day meal prep!

Not Just a Pretty Truffle

Ingredients:

  • 1 cup old-fashioned oats
  • 3 tablespoons unsweetened cocoa powder
  • ⅓ cup unsweetened shredded coconut
  • ½ cup ground flaxseed
  • ⅓ cup apricots, roughly chopped
  • dash of salt, to taste
  • ½ cup crunchy almond butter
  • ⅓ cup honey
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1 tbs of roughly chopped cocoa nibs
  • 1 tbs of roughly chopped walnuts
  • 3 tbs of toasted unsweetened coconut flakes

Step 1

In a medium bowl, stir together the oats, cocoa powder, ⅓ cup coconut, ground flaxseed, apricots and salt. 

Step 2

In another small bowl, melt the peanut butter, honey and coconut oil in the microwave in 10-15 seconds, stirring until completely melted and combined. 

Step 3

Stir in vanilla. Add wet ingredients to dry and stir well until fully combined.

Step 4

In a small separate shallow bowl, stir together the toasted coconut flakes, cacao nibs and walnuts.

Step 5

Use clean dry hands, roll the oat mixture into small 2 bite balls and then roll them around in the bowl of your 3 tbs of coconut, nibs & walnuts till your chocolate health truffle is completely coated.

Step 6

Store in an airtight container in the refrigerator. Place in the refrigerator to set.

Cruzin' with Chestnuts

 

Step 1

Preheat your oven to 450 degrees F. 

Step 2

Cut an "X" shape into the flat side of each chestnut. Use a sharp knife to do this and please be careful! 

Step 3

Place the chestnuts on a lined baking sheet.  

Step 4

Hand sprinkle a little drizzle of tap water over your chestnuts (I call this technique "the Cruz way" - thanks girls!)

Step 5

Lightly sprinkle some sea or kosher salt over the prepared chestnuts

Step 6

Roast the chestnuts for 20-30 minutes (I would start tasting their readiness at 20 minutes. You will know when the chestnuts are fully cooked when they are no longer firm and easy to bite into).

Step 7

Peel and enjoy! (but be careful while peeling as your chestnuts will be extremely hot)

NJAPP Pro Tip: Chestnuts can be roasted over an open fire, boiled in hot water, baked in an oven or you can even consume these babies raw. Yes, you read that correctly! Hard core Chestnut lovers even eat their chestnuts raw when the cravings are too intense. Only few have the raw bragging rights and you know who you are (wink wink).
