Ezekiel Bread +Sweet

 

1 slice of Ezekiel Bread

1 cup of cottage cheese (I love the Muuna brand)

3 large strawberries

1 tbs of dried mulberries

1 tbs of almond butter

Local honey (a couple drops)

Light dusting of cinnamon

Step 1

Start with toasted or un-toasted either way use 1 slice of Ezekiel bread as your base.

Step 2

Spread the almond butter on your bread/toast.

Step 3

Add 1 scoop of plain cottage cheese on top of your almond butter.

Step 4

Slice your strawberries and pile them on top of your cottage cheese with the mulberries.

Step 5

Finish off your toppings with a sprinkle of cinnamon and add a couple drops of some local honey to really make this breakfast taste extra sweet.

Ezekiel bread with a "pop"

1 slice of Ezekiel Low Sodium Bread

1 cup of plain cottage cheese (I love the Muuna brand)

1 tsp of ground flax seed

Sprinkle of fresh ground pepper

Toasted pumpkin seeds

Pinch of sea salt

 

Step 1

Heat your frying pan over a medium heat. Add your pumpkin seeds to your heated pan till your seeds start to turn brown and start popping. Set aside.

Step 2 

While your seeds are browning on your frying pan you can start lightly toasting your bread. Place on a plate when your toast is ready.

Step 3

Scoop out your cottage cheese onto your toast. Sprinkle your fresh ground pepper onto your cottage cheese. Add your toasted pumpkin seeds on top of your cottage cheese. Finish off with a dusting of fresh ground flax seed and some sea salt.

Step 4

Enjoy!

 

 

NJAPP Hash

Ingredients:

  • 1 -2 Sweet Potatoes, peeled and cubed
  • 1 Yellow Onion, diced
  • 1-2 Tbsp of Coconut Oil or EVOO
  • 1 Tsp of Kosher Salt
  • ½ tsp of fresh ground pepper

Step 1

First heat your pre-seasoned cast-iron skillet on medium heat and add your oil.

Step 2

Add your onions to the skillet with melted oil, mixing it all together. Cook for about 8 minutes, just enough till they are semi-translucent.

Step 3

Now it is time to mix in your potatoes with your onion party. Occasionally give this hash a mix to prevent too much browning on one side of the potatoes. Make sure you check your flame. You might have to raise or lower it depending on your pan. Cooking time should be about 10-15 minutes. Cook just enough till the potatoes slide off your fork tester and the potatoes and onions start to get that beautiful brown coloring that is packed with taste.  

Step 4

Once your “Hash” is ready, serve alongside anything!
