NJAPP Waffles

Makes about 6-8 small round waffles

Ingredients:

  • 1 cup of all-purpose organic flour
  • 1 tsp double-acting (Non-GMO) baking flour
  • ¼ tsp of sea salt
  • 2 ½ tbsp of powdered sugar
  • 1 tsp of cinnamon
  • 1 cup of organic 1% or whole milk
  • 1 tsp of good vanilla extract
  • 1 large organic egg
  • 2 tbs unsalted butter

Step 1

Preheat your waffle iron. Melt your butter and set aside.

Step 2

In a large bowl, mix the dry ingredients: flour, sugar, baking powder, cinnamon and salt. Stir with a whisk.

Step 3

In a separate glass bowl mix the wet ingredients: milk, eggs and vanilla (lightly mix until combined and set aside).

Step 4

Pour the liquid ingredients over the dry ingredients and mix with the whisk, stopping when the ingredients are just combined and smooth (Do not over mix).

Step 5

Now it is time to add the melted butter and stir again.

Step 6

Lightly spray your iron with cooking spray. Following your waffle iron directions. Add the batter, close the lid and cook until browned and crisp. Serve your the waffles immediately with maple syrup and fresh berries (I like a heart shaped strawberry for Valentine’s Day).

NJAPP Tip: This recipe can easily be used for pancakes too! I would just double the recipe and freeze the leftovers (if there are any).

NJAPP-Mulberry Protein Shake

Ingredients:

  • 1 Cup of Unsweetened Vanilla Almond Milk
  • 1 Scoop of Protein Powder (I use vanilla Vega Sport)
  • 1 Small - Medium Frozen Banana
  • ½ cup of mixed berries
  • Handful of Spinach
  • 1 Tbsp of Instant Oats
  • 4 Ice Cubes
  • Mulberries
  • Chia Seeds

Combine all of the above ingredients (except for the mulberries and chia seeds) in your blender. Blend until smooth. Pour immediately into a large glass and top it with your set mulberries and chia seeds. Enjoy!

Energizing Chicken Thighs

Ingredients:

  • 1 Package of Organic Chicken Thighs
  • 1 Red-Orange Pepper
  • 1/2 of a Sliced Yellow Onion
  • 4 Minced Garlic Cloves
  • 1 Can (rinsed & drained) of Organic Chickpeas
  • 2 Medium Green Zucchinis
  • 2 Tbsp of Coconut Oil
  • Juice from a Fresh Lemon
  • Salt & Pepper

Step 1

Preheat your oven to 375 degrees or 350 for conventional oven cooking. Heat your coconut oil on your skillet on a medium-low flame.

Step 2

Add your sliced onions and garlic to the melted oil until the garlic starts to get pumped up.

Step 3

Add the chicken thighs and mix together with your onions and garlic. Sprinkle some salt and pepper over your protein at this point.

Step 4

Cook for about 3 minutes, occasionally flipping your thighs to prevent them from burning and cooking too fast. Make sure your keep an eye on your flame intensity.

Step 5

Add your zucchini slices, peppers and chickpeas to your protein party and give the whole party a good mix up.

Step 6

Remove from stove top and place your skillet of pure energy into a 375 degree pre-heated oven. Cook till your thighs are completely cooked. About 30-45 minutes. Enjoy and Seize the day!
