Power Snack +5

Part 1

Cooked ingredients:

  • Protein: 12-16 oz of cooked and chopped chicken breast, cooled to room temp.
  • Grain: 1 cup of cooked and cooled wheat berries.
  • Fruit: 1 segmented naval orange.
  • Veggie: 1 cup of blanched string beans, chopped.
  • Good fat: 4 tbs toasted sunflower seeds.

Part 2

Dressing Ingredients

  • 1 tsp kosher salt
  • ½ ground pepper
  • ¼ tsp of garlic powder
  • 1 tbs of fresh chopped mint
  • 2 tbs of chopped red onion
  • ½ cup of white vinegar
  • 1 cup of orange, coconut zico drink. (save some for later in case your mixture dries out)
  • 2 tbs of melted coconut oil (do not mix your coconut oil with your other cold liquids, because your coconut oil will solidifythe moment it mixes with the cold liquids.)

Step 1

Mix all these cooked ingredients in a medium mixing bowl. Mix together your chicken, wheat berries, orange pieces, string beans & sunflower seeds. Set aside.

Step 2

Pour your melted coconut oil over your cooked, chopped ingredients. Give that Power Snack +5 ingredients a good mixing, and make sure your coconut oil is well mixed in too. Optional: Sprinkle a little salt and pepper over the mixture and give it one more stir.

Step 3

In a separate glass bowl combine all your wet & dry dressing ingredients. Once everything is whisked together, pour your dressing mixture over your Power Snack +5 mixture and stir till everything is well dressed and mixed. Serve yourself a cup of this amazing Power Snack +5 and enjoy.

Step 4

Store your Power Snack +5 in a glass meal prep container or in small round snack containers for on the go snacking. Enjoy and remember to ASK B4 U SNACK.

Salmon +Onions

Ingredients

  • 1 medium yellow onion
  • 1 pound of Salmon (I prefer the wild salmon)
  • Sea salt or Kosher salt
  • Organic cracked pepper
  • Organic onion powder
  • Organic garlic powder
  • Spray Canola oil
  • 1 tbs of coconut oil

Step 1

Start with a 385 degree preheated oven.

Step 2

Spray, and season your parchment lined cookie sheet with your oil/spray of preference, and ¼ tsp salt and ¼ tsp pepper first.

Step 3

Place your fish/salmon on top of your blanket of oil, s&p.

Step 4

Season the entire top of your fish/salmon now. With a gentle sprinkling of these seasoning:

  • ¼ tsp of salt
  • ¼ tsp pepper
  • ¼ tsp of organic onion powder
  • ¼ tsp of organic garlic powder

Make sure you spray/drizzle your oil to secure the blanket of seasoning that is on top of your fish/salmon.

Step 3

Place your seasoned fish into your pre-heated oven for about 25 minutes.

Step 4

Once your fish is all done, set it aside and cover it with aluminum foil until your onions are ready.

Step 5

Using a medium saucepan add 1 tablespoon of coconut oil over a medium heat. Once your oil has been melted add your sliced onions to the oil and stir. Cook on a low flame for about 10 minutes until the onions become translucent.

Step 6

While your onions are cooking, now you can uncover your salmon and start flaking it apart. Be sure you remove the skin and dark meat before you start breaking up your fish.

Step 7

At this time your onions should be translucent and ready for your flaked fish to be added. Season again with a dusting of salt and pepper. Give your mixture one last stir before you plate and store.

NJAPP Tip: I like to cook my 1 pound of fish/salmon for about 20 minutes, and finish it off with a high broil for about 2-4 minutes. Once your fish is removed from the over lightly cover it with aluminum foil. This gives your fish a little recovery time for all its working out.
