Cheap & Easy Snacks

Summer snacking can be super dangerous! Especially, when that delicious bag of Cape Cod chips is sitting in your pantry to serve along side your kids burgers and hot dogs for lunch time. Just one little chip wont hurt anyone right? Yes, you are correct but who can really just have one chip? This is why I had to share my cheap and easy summer snack-prep for you. 

SHOPPING LIST

  • eggs (hard boiled is the best way to store them)
  • 2 grilled chicken breasts 
  • 1 Haas Avacado 
  • 1 head of romaine lettuce
  • 1 lemon

NJAPP Pro-Tip: You can eat the above snack options all together or seperate. Either way, stick to a higher protein/good fat snack choice and just say "NO" to those chips. Happy Summer!

Self-Improvemint Shake

  • ️8oz of unsweetened vanilla almond milk 
  • 1 cup of ice cubes
  • ️1/2 of a medium banana 
  • 1 scoop of vanilla protein powder (I like Vega Sport
  • ️1 large handful of spinach
  • Give or take 5-8 fresh mint leaves

Step 1

Add all the above ingredients in that order into your mixer and blend on high for 3 minutes. 

Step 2

Pour immediately into a large glass cup and garnish with a mint leave.

Summer Salad

Summer Salad

Ingredients

  • 2 cups of cubed, skinless, cooked grilled chicken breasts
  • 1 large container of washed & dried blueberries
  • 4 english cucumbers sliced
  • 1 cup of whole pecans
  • ¼ cup of finely chopped red onions
  • 2 finely chopped heads of romaine lettuce

Dressing

  • ¼ cup of grapeseed oil
  • ¼ cup of white vinegar
  • 2 tbsp of apple cider vinegar
  • ¼ cup of blueberries
  • 2 tbsp of agave
  • 2 tbsp of cold water
  • Salt & pepper to taste

 Step 1

In a large bowl, toss the greens, blueberries, pecans, cucumbers, onions and chicken until well mixed.

 Step 2

For the salad dressing, combine the grapeseed oil, white vinegar, apple cider vinegar, blueberries, water and agave in a blender. Blend until smooth. Add salt and pepper to taste.

 Step 3

Pour ½ the dressing over your mixed salad and toss until everything is combined. Optional: Add salt and pepper to taste. Set extra dressing aside in case you need to drizzle a little more on.
